Cupping Notes

The ground coffee has a raisin-y dried fruit sweetness to it, with molasses, and spiced sugars. The wet aromatics have a sweet smell of aromatic sugars that I liken to panela/piloncillo type reduced sugar cane juice, or agave syrup. The cup flavors are infused with sweetness, from unrefined sugars to fruited hints. There's an underlying flavor note of sugar cane juice, with its complex aroma, and syrupy sweet flavor profile that has notes of molasses and vanilla. Light roasts have a moderate level of acidity, and the cup profile cools to fruited accents of orange, and even a hint of passion fruit. While the body is not on the weighty side, it's silky and pleasant. This flavor profile sits nicely atop a backdrop of cocoa powder that hangs through to the long, sweet finish. This coffee offers impressive sweetness at a range of roasts, and does well as espresso in the Full City-Full City+ end of the spectrum.
