Los Santos is great dark roast Costa Rica option and offers a high potential for deep cocoa roast flavors. The smells emitted notes of malted chocolate, almond, and a hint of brown sugar. At Full City and Full City+, the coffee is all bittersweetness and body, and I think could withstand Vienna roasting too. Sweetness seemed a bit mild in light roasts, whereas somehow it seemed to stand out more at Full City+ (in the same way a pinch of salt can heighten perception of sweetness). Cup sweetness is adequate, simple, and offers some contrast to savory nut hints, and chocolate bittersweets. The aftertaste has intense roast bittering, like unsweetened cocoa. Body scored 9.2, is very thick in the dark roasts, and creamy when pulled as espresso.
