Raw sugar notes came through right from the start in this Flores lot, with interesting accents of semi-refined cane sugar, ginger bread and nutmeg. I also picked up on a mild herbal note, like dried basil. The wet aroma smelled balanced and clean, and had a sweet-spiced note, like the brown sugar and cinnamon crust on a coffee cake. The coffee showed very clean sweetness in both light and medium roasts, and the lighter of the two had a tart acidic impression, which was a nice surprise. City roasts are a pleasure to drink, with balanced sweet and bittering tones, and very subtle top note accents of whole spices. It's an incredible dark roast option as well, with milky body, and mild acidity making it a great espresso option too. I really enjoyed my dark roast as a full immersion brew, thick bodied, opaque chocolate flavors that fade to some smoky roasted nibs in the aftertaste.
